Home-Made Spaghetti Sauce
Thompson Family Favoriteswww.kelleythompson.com
INGREDIENTS:
- 30 oz tomato sauce
- 2 tsp sugar
- 1 tsp oregano
- 1 tsp Italian seasoning
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
INSTRUCTIONS:
Combine all ingredients in a medium sauce pan and bring to a boil over medium-high heat, then simmer over medium-low heat for 20 minutes. Stir occasionally. Pour over cooked pasta and top with Parmesan cheese, if desired. There is nothing inherently spicy about the ingredients, but *something* about the combination seems to bring out a little heat, so more tomato sauce (we use up to 8oz more) is OK.
Notes:
For a meaty sauce, add 1 pound of ground beef, turkey or sausage, browned and drained. Add the remaining ingredients to the skillet and cook as directed.
Spruce up the sauce by using any or all of the following: red pepper flakes, fresh tomatoes or diced tomatoes, crushed tomatoes, olive oil, fresh basil or dried basil, grated Parmesan, a few minced garlic cloves or fresh chopped onions.
Add sugar 1 teaspoon at a time for a sweeter sauce.
Store leftovers in an air-tight container in the fridge. Use within 4-5 days.

Home-Made Steak Marinade
Thompson Family Favoriteswww.kelleythompson.com
INGREDIENTS:
- 1/3 cup soy sauce
- 1/4 cup lemon juice
- 1/2 cup olive oil
- 1/4 cup Worcestershire sauce
- 2 teaspoons minced garlic
- 1 tablespoon Italian seasoning
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon onion powder
INSTRUCTIONS:
Place all the ingredients in a bowl or in a resealable gallon sized freezer bag (I like this option). Mix to combine. Add steaks to the marinade. Marinate for at least 1 hour, or up to 24 hours. Cook steak as desired. Marinade makes enough for 2 pounds of steak.
This marinade can be stored in the fridge for up to 5 days, so it's great to make in advance if you're entertaining. You can even freeze your marinade for up to 2 months if need be!
